Scalloped Potato Casserole
Here's what I like about this recipe. It's easy to make, requires little attention, and tastes great without any meat. It's a sort of veggie comfort food. Of course, if you want to add some meat, feel free. Chopped or cubed ham would go really well in this dish. Smoked sausage provides another enticing possibility. But if you're looking for a great tasting option that can help you eat more meatless meals, this is certainly a great choice. Alternatively, you could make this dish to serve as a side to some other entree.

Ingredients
1 box scalloped potatoes mix
2 cups chopped broccoli 2 cups chopped carrots 1/2 cup green peas 1/2 cup milk 2 Tbl butter 2 cups boiling water 2 cups shredded cheddar cheese |

[Note: This recipe cooks in a standard size casserole dish but produces so few servings because it's just vegetables and cheese --- not a lot of calories there. So you need a larger portion to feel full. If you add meat (1 cup cubed ham, for instance), you could divide the same casserole dish into 6 servings.
Directions
Mix the sauce mix from the boxed scalloped potatoes and milk in the casserole dish.
Performing this step first ensures the sauce is a bit more even in the finished dish. Several brands of boxed scalloped potatoes are in the marketplace. These are usually just dehydrated potato slices and a packet of sauce mix powder. Mix the base of the sauce first before adding anything else. Add just a little milk to the powder at a time, stir until consistent, and then repeat until you use all the milk. And if the package says to use a different amount of milk, follow the package directions. |
Add potato slices and vegetables. Stir until well mixed..
I usually cook the vegetables before adding them in this dish, and using the variety that steam-cooks in the microwave really helps with that. I also usually break up the dried potato slices with my hands before adding them to the sauce mix. This makes it easier to achieve a more even distribution of ingredients throughout. |
